Prebiotic Slaw & Quinoa Burrito (Sneak Peak)
One of my fav, clean and easy-to-make recipes from my 5 Day Soul and Body Detox ebook (get it here...) is this Prebiotic & Slaw QUinoa Burrito recipe, I have it at least once a week!
- 1 cup Purple Cabbage, shredded
- 1/2 Avocado, diced
- 1/2 small Red Onion, thinly sliced
- Optional: (Add shredded carrots or beets)
- 1 cup Quinoa, cooked from previous day
- Collard Leaves, washed
- 1 Lemon, juiced
- 2 tsp raw Apple Cider Vinegar
- 1/2 Garlic clove, minced
- 1/4-1/2 tsp Sea Salt
- 3 tbsp Hemp Seeds + 3 tbsp Olive Oil
Add all non-dressing ingredients into a bowl, except quinoa. Start making your Burrito dressing by putting all the dressing ingredients in blender and blending until smooth. If you need to, add 1-2 tbsp of water to reach smoother consistency, feel free.
Wrap it Up: Add 1/2 of dressing to ingredients in bowl, then add quinoa and toss until coated. Leave the rest of the dressing as a dip or pour it inside Burrito right before wrapping. Use a large spoon to spoon ingredients into a collar leaf and sprinkle hemp seeds on top as optional. Fold both sides of collard leaf over ingredients, then fold bottom over and roll to form a Burrito wrap. Serve and enjoy!
