I love Gazpacho! It is such a great way to add on fresh, raw veggies to your day to day in an easy to make, blended soup. Gazpacho originates from the South of Spain and is a cooling and refreshing summer soup best served cold. Enjoy!
IN VITAMIX OR BLENDER ADD:
- 2 Cups Assortment of Tomatoes (I used yellow & red heirloom tomatoes and cherry tomatoes.)
- 2/3 Cup Chopped Cucumber.
- 1 Kale Stem.
- 1 Medium Carrot.
- 1/2 Red Bell Pepper.
- 1 Celery Stem.
- 1 Tbsp Chopped Yellow Onion.
- 1/3 Garlic Clove.
- 2 Tbsp Freshly Chopped Basil.
- 1/2 Creamy Hass Avocado.
- 2 Tbsp Apple Cider Vinegar.
- 2 Tbsp Olive Oil.
- 1/2 Tsp Celtic Salt.
- 1 Tbsp Ground Flax Seeds.
- Optional: 1 Tsp Miso Master Miso Paste.
Toss ingredients in a Vitamix or blender and... blend! Top with dried basil and drizzled olive oil. Serve & Enjoy!
