Who doesn't love Ice cream! This is a dairy/sugar-free, delicious, easy and healthy recipe perfect for when a craving strikes!
IN VITAMIX OR BLENDER ADD:
- 1 Cup Chilled unsweetened, organic, gum-free Coconut Milk (leave in fridge overnight.)
- 1 Cup Frozen Wild Blueberries (or organic blueberries.)
- 1 Cup Frozen Organic Strawberries
- 2-4 Squirts Vanilla Creme Stevia (or regular Stevia.)
- 1 Tsp Fresh Lime Juice.
- Pinch of Celtic Salt.
Optional: For this recipe I topped with Cacao Nibs, Maca Powder & Chia seeds.
Add 1/2 cup coconut milk, 1/2 cup blueberries and strawberries into blender and blend for 1 minute until smooth. Add the rest of the ingredients and blend for another minute until smooth. Do not blend for longer than 2-4 minutes as ice-cream will melt. Enjoy!
