
Ingredients: (Serves 3)
- 1 cup grated carrots
- 1 cup grated beets
- 1/3 cup chopped cilantro
- 4 tbsp olive oil
- 2 tbsp fresh squeezed lemon
- 1/4 tsp Celtic Salt or Sea Salt
- 1/8 tsp powdered cumin
- Optional: 1 tsp grated ginger
How to: Add carrots, beets and cilantro to a bowl. Dress with olive oil, lemon, salt and cumin. Mix well, serve and enjoy!
